Put apples, liquid and raisins in a saucepan and bring to the boil.

Cover, reduce the heat and simmer until the apples are soft - about 20 minutes

Whiz at high speed in a blender until smooth and return to the saucepan.

Continue to simmer, uncovered, on very low heat.

Add the brown sugar, spices and lemon zest.

Cook for another 30 minutes until very thick and dark brown.
